Camping Food Ideas

My motto when camping is, "keep it simple"--enjoy your time away and you can go back to more nutritious food when you return home.

And, keep your food selections easy to prepare--cooking on a two burner stove can be challenging enough! Use prepared foods as much as possible, or pre-prepare your food before you go.

And, prepare as many "comfort foods as possible; camping is not the time to try new recipes--none of us need the complications.

I make a rough menu before we leave home--main course (i.e. eggs for breakfast) for each meal with extra food listed (i.e. orange juice, jam).

For some sample ideas:

Breakfast
Prior to when we moved to Colorado and began camping in the mountains, I'd bring pancake mix with syrup for a breakfast. (In the mountains they take too long to cook.)
Eggs with sausage: cooks up the quickest and is filling. I bring a dozen (enough for a camping egg holder) and we eat them over two breakfasts.
We cook boxed granola in milk (as the morning are often cool, and a warm breakfast "hits the spot).
We also bring boxed cereal [a gallon or two of frozen milk served first as "ice" in the cooler, then, of course, as milk once it thawed!) and bagels (with jam, peanut butter, and cheese) to toast in a frying pan.

Lunch
Hot dogs, beans, and macaroni & cheese
Sloppy Joes (with seasoning packets bought on sale)
Tuna salad on bread
Peanut butter and jelly sandwiches
Grilled cheese and tomato soup
Canned soup and bread with cheese

Supper
Taco salad (taco seasoning mix with ground beef), chopped tomatoes on corn chips (we usually eat this the first night since the tomatoes don't keep).
Chicken (I freeze the meat with the spices on it and cook it after it has thawed).
Spaghetti with meat sauce (again, using frozen hamburger that acts as "ice" during the first couple of days of our trip)
Chili (with a seasoning packet and canned beans)

Dessert
S'mores
Store bought cookies (a treat since we never bought)

I found we also really enjoyed fresh food while out-of-doors. I'd bring melons, fresh veggies, cole slaw, and oranges.
